All-American Shrimp Salad

Perfect for a summer picnic, day on the boat or a fun patriotic lunch.

Ingredients:

    • 1/2 lb. shrimp, cooked, thawed, approximately 2C.
    • 3 Tbsp. mayonnaise
    • 3 Tbsp. yogurt , plain
    • 4 green onions, choppedFODMAP
    • 1/2 chunks avocado(s)FODMAP
    • 2 tsp. lemon juice
    • 1/4 tsp. dill weed

Combine first 7 ingredients in a medium bowl.  Stir, cover and chill at least 30 minutes.

Serve on tortillas or on a bed of lettuce.

Yield: 

2 C.
