Tarragon Chicken Salad

Great, fresh, crunchy summer salad or anytime of the year.

Ingredients:

    • 2/3 C. mayonnaise
    • 2 Tbsp. g.f. mustard
    • 1 Tbsp. raw honeyFODMAP
    • 2 tsp. lemon juice
    • 1 1/2 C. chicken breast(s), boneless, skinless, baked, diced
    • 1/2 C. cashewsFODMAP
    • 1/2 C. celery, choppedFODMAP
    • 3 tsp. onion(s), choppedFODMAP
    • 3 Tbsp. parsley, flat leaf, chopped
    • 2 Tbsp. tarragon, fresh, 1/2 tsp. dried

Whisk together first four ingredients. 

Combine all other ingredients in large bowl and toss with dressing. 

Serve on butter lettuce or over mixed greens.
